           Bimbli Pickle/Bimbla Uppad

Crunchy,sour & juicy bimbli fruit/ even if I think of this taste,my mouth is watering.
A spicy, tangy pickle made using tree sorrel/Averrhoa bilimbi . This is one of the lipsmacking pickle and taste delicious with some curd rice, porridge or roti.

*Ingredients
Bimbli
Salt 2tbsp
Oil 2tbsp
Fenugreek seeds 1/2tsp
Mustard seeds 1tsp
Curry leaves 7-8
Asafoetida 1tsp
Red Chilli Powder 4tsp
Garlic 4
Ginger 1/2"

*Method
Take bimbli and wash well.
Dry and chop it into small pieces.
Take it in a bowl, add salt and mix well. Cover and let it sit for 1 day.
Next day drain the water and keep it for later use
Heat oil in a pan, add mustard seeds, fenugreek seeds, curry leaves and asafoetida and mix well.
Add chilli powder and turmeric powder and mix well.
Add drained salt water let it boil
Off the flame
Now add bimbli and Mix well.
Store this in a air tight container in fridge till needed.
Enjoy with rice, curd rice or porridge
