                                  MANGALORE/UDUPI CHICKEN CURRY

       To prepare Mangalore/Udupi Style chicken curry the main ingredient used is coconut. Coconut is main bass for most of the coastal cuisines that what makes it so rich, creamy and delicious.
         There might be some variation in every household recipes I got this recipe from my grandmother which is been passed over from many generations.
 
Lets begin with the recipe.
     
Ingredients

For grinding masala

Dry red chili (long-15,small-10)
Cumin seeds 1 tsp
Pepper corns 10-15
Fennel seeds 1 tsp
Methi seeds 1 tsp
Khus Khus 1 tsp
Coriander seeds 1 cup
Onion 1
Garlic 4-5
Cinnamon 2-3
Cloves 2-3
Ginger small
Tamarind small lemon size

For Coconut Milk

Grated Coconut 1

For Cooking 

Ghee 1 tbsp 
Onion 1
Tomato 1
Chicken 1 kg
Turmeric powder 1 tsp
Salt as per taste
Coconut milk

Tempering/Tadka

Chopped Coriander
Ghee 1 tbsp
Mustard seeds 1 tsp
curry leaves 7-8

METHOD
  • Dry roast all the spices in a pan.
  • Dry red chili (long-15,small-10)
    Cumin seeds 1 tsp
    Pepper corns 10-15
    Fennel seeds 1 tsp
    Methi seeds 1 tsp
    Khus Khus 1 tsp
    Coriander seeds 1 cup
    Onion 1
    Garlic 4-5
    Cinnamon 2-3
    Cloves 2-3
    Ginger small
  • Grind the roasted spices adding little water & Tamarind small lemon size into a fine paste.
  • Extract coconut milk by grinding grated coconut adding little water & strain the milk. (Thick Milk)
  • Re-grind the coconut & strain the milk. (Thin Milk)
  • In a thick bottom vessel Add 1 tbsp Ghee.
  • Add 1 chopped onion & fry till translucent.
  • Add 1 chopped tomato & fry till soft.
  • Add chicken
  • Mix well
  • Add salt as per taste.
  • Add little water & let it cook for 5 min.  
  • Add grinded masala paste mix well & let it cook for 5-10 min.
  • Add Thin coconut milk let it boil.
  • Add Thick coconut milk let it cook for 5-10 min.
  • For tampering 
  • Take a small pan/tadka pan add ghee,mustard seeds & curry leaves.
  • Pour the tampering into curry & add chopped coriander leaves.
