For Marination
Chicken 1kg
Curd 1cup
Turmeric 1/2tsp
Salt as per taste
For Grinding
Coriander seeds 2tbsp
Jeera 1tsp
Cinnamon 1"
Cardamom 2
Cloves 2
Star anise 1
Methi +pepper 1/2tsp
Fennel seeds 1tsp
Dry Red Chilli 10-15
Tamarind pulp 1/2tbsp
Jaggery small piece
Curry leaves few
Garlic cloves 5
Mint leaves few
For Preparation
Ghee 4-5tbsp
Onion 1
Curry leaves 7-8
Cashew nuts 1
Coriander leaves
Salt as per taste
• Method
- Marinate the chicken with curd, turmeric & salt (30mins)
- Soak dry chilli (30mins)
- Dry Roast whole spices (Coriander seeds, Jeera, Cinnamon, Cardamom, Cloves, Staranise, Methi +pepper, Fennel seeds)
- Grind soaked chilli, roasted whole spices, tamarind, garlic, onion, jaggery
- Heat 2tbsp ghee add grinded masala fry until aromatic & thick. Transfer into other plate
- In same pan add 1tbsp ghee & add marinated chicken. Saute for 5min & close lid and cook for 10mins
- Add masala mix well and let it cook for 10mins
- In another pan heat 2tbsp ghee fry onion, curry leaves & cashew nuts until golden brown.
- Add it to chicken & mix
- Garnish with chopped coriander leaves.
